Pesto slaw is refreshing


So, last week I came across a recipe on Mia's Domain (miasdomain.com)  for an Avocado Egg Salad that looked really good. I had most of the ingredients, but didn't have any avocado, so I pulled out some shredded lettuce, which made it more like slaw than salad, but it was quite refreshing.


2 cups of shredded lettuce
2 finely chopped celery ribs
1 finely chopped red pepper
1/4 finely chopped white onion
4 tbsp. pesto sauce
2 boiled eggs, peeled and quartered
Olive oil to drizzle
Freshly ground pepper

Place lettuce, celery, red pepper, onion in bowl. Add pesto and stir to coat. Arrange eggs on top, drizzle with olive oil and add pepper to taste. Serve immediately.
