Three Embers in Lincolnshire Introduces Spring Menu

This week the Chicago Foodie Sisters attended an event at the newly-renovated Marriott Resort Lincolnshire to introduce the seasonal spring menu at the resort's signature eatery, Three Embers. We enjoyed trying five courses from Executive Chef Jesus Medina and Food & Beverage Director Pierre Daval. Each was paired with a nice wine. 





We started off with a pierogi of braised veal cheeks with baby carrots and horseradish cream. I adore these little stuffed Polish dumplings and this was a fun take on it. The horseradish cream was fantastic.



It was followed up by a baby kale salad with strawberries, blueberries, pickled red onion and almonds with a raspberry vinaigrette.



The third course was probably my favorite. I'm a sucker for scallops and these could not have been better. They were perfectly-cooked with a perfect sear and were accompanied by orzo, grilled carrots and pea puree with lemon butter sauce. It all came together so perfectly.



Next up was veal tenderloin with kohlrabi puree, which I loved, and java beans and mushroom with a bourbon reduction.




And just when I thought I couldn't eat another bite, out came this phenomenal dessert duo. Lemongrass wanna cotta was topped with strawberry mouse was paid with a carrot cake cheesecake. It was a stunning work of culinary art that was almost to pretty to eat.



Among the other seasonal entrees in this wood-fired dining room are a bone-in ribeye, pork shank, rack of lamb, trout, grilled halibut, roasted Amish chicken and mushroom risotto. The sides sound amazing - among them smoked shallot whipped potatoes, risotto croquette and smoked cheddar grits. A couple of the appetizers I was eyeing are the burrata with apple chutney and the grilled New Tor crostini with local mushroom duxelle.

We had a chance to chat for a few minutes with Food & Beverage Director Pierre Daval who told us about the on-site gardens and beehives. It's apparent that so much passion goes into everything that goes onto a plate at this tranquil resort. Besides being a fabulous dinner spot, it's a perfect getaway where you totally feel like you've gotten off the beaten path as soon as you turn into the 175-acre property.
