Sheet Pan Eggs with Veggies

TikTok has been one of my favorite sources for recipe ideas the past few months. A couple have popped up recently with sheet pan eggs. They didn’t give exact measurements in their videos, but were making enough to cover a sheet pan, so it looked like there were maybe 1 1/2 dozen eggs in there. I didn’t want to make that many, so I adjusted it for the size pan I was using and picked out ingredients based on what was in my fridge. I ended up with a nice bunch of pre-cooked egg squares that will be great to grab and heat for meals. The squares will also fit nicely on toast, an English muffin, bagel or biscuit for a breakfast sandwich.

Here’s how I made this batch:

Ingredients:

8 eggs
1/4 cup half and half
1/3 cup diced mushroom
1/3 cup diced red and green bell peppers
5 chopped strips crispy bacon
A couple leaves of finely chopped kale
Trader Joe’s Everyday Seasoning
1 cup shredded cheese

Whisk eggs and add in milk followed by chopped veggies and bacon. Add in 3/4 cup of the cheese. Mix well and add into a parchment-lined baking dish. Then sprinkle with seasoning and the rest of the cheese.

In the videos I watched, a full sheet pan was used, but it was mentioned how careful you had to be putting the pan in the oven so it wouldn’t drip out. I decided it would be easier to use a cake pan. And I lined it with parchment paper to prevent sticking and it worked perfectly. I baked at 350 degrees for 30 minutes.

They were the ideal thickness and peeled right off the paper. After it cooled I cut them up and I now I have breakfast ready to go for the next several days.
