Taco Salad

Once in a while I remember a dish from childhood that I haven't had in forever and I just have to have it. It happened recently with taco salad. It's not something I have made much in adulthood and it has been years since I had it, but a picture popped up somewhere on social media recently and I decided to make this side dish that I remember from many potlucks and summer barbecues in my youth.

I had a little leftover ground beef from tacos and decided to make a couple servings of this salad. I did overdo the dressing and will scale it back a little next time.

It's quick and easy to make if you already have the beef prepared and I threw it together in just a couple minutes. This recipe made a couple servings.

1 cup of shredded or chopped lettuce (I prefer romaine)
1/4 cup shredded cheddar cheese
1/2 cup diced tomato
a tablespoon of chopped green onion
1/4 cup seasoned ground beef taco meat (slightly warmed)
a handful of crunched up Taco flavored Doritos
a drizzle of Catalina salad dressing

Toss together and enjoy!
