Tomato Basil Soup in the Pampered Chef Cooking Blender

During the pandemic, in mid 2020, when everyone was at home learning to cook, it seemed like a good time to do something I had always been interested in - being a Pampered Chef consultant. I loved their products and I still have some items that I've had for a couple decades or more. I went to my first Pampered Chef home party before I was even married, which was in 1991. I enjoyed the parties and liked the idea of earning free and discounted product. But, there was never time in my schedule to work in driving all over the region to do in-person demos at people's homes.
When everyone was hunkering down at home, Facebook parties became very popular and it seemed like a great opportunity for this side gig. I started doing Facebook parties and hosted some very successful parties where my hosts earned a lot of free items and discounts. I was excited to also get some great deals on products that I loved. When I had an opportunity for a 60% discount, I'd use it on a big item I'd been wishing for. The first one was the Pampered Chef cooking blender. You're able to cook soups right in it and I've made some delicious batches of tomato basil soup and butternut squash soup.
I recently made some tomato basil soup and grilled cheese for dinner. I slightly modified the recipe on the website. It couldn't be easier:
1 28-ounce can of whole tomatoes
6 campari tomatoes
1 tbsp mined garlic
1 shallot
1/4 cup water
1/8 tsp Italian seasoning
pinch of salt
basil
croutons
Place everything in blender and set to the "soup" setting. Once it is finished, remove the vented top and drop in basil. Hold the pulse button down for about 20 seconds or until basil is blended in. Add additional basil for garnish. Top with croutons.
