Stuffed green pepper soup

As the last of the green peppers were being harvested from the garden, I had to make some soup. Here's what went in this pot:

2 tsp. Better than Bouillon Beef Flavor
8 cups of water
1 pound browned ground beef
1 yellow bell pepper, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 can seasoned, diced tomatoes
3 diced roma tomatoes
Italian seasoning to taste
1 Trader Joe's microwave brown rice packet

Add Better than Bouillon to water with seasoning and bring to a boil. Add peppers and continue to boil for about 10 minutes. Reduce to a simmer and add tomatoes. Continue to simmer for about 15 minutes. Prepare rice as directed in microwave. Add ground beef and rice and simmer for another five minutes. Enjoy!
