Strawberry jam
I’ve made strawberry jam in the past, but only in small batches that we refrigerated and consumed quickly. My husband has been wanting to do canning for years and last year was his first try at it. He made some phenomenal strawberry preserves.
He made some again this past weekend, doubling his batch because there’s so much work involved.
He used a simple recipe he found online.
5 1/2 cups of strawberries
8 cups of sugar
1 package of pectin
He boiled together and then went through his canning process. Peronsally, pressure cookers scare me a little, so I was happy to let him handle that part.
We’ve both made efforts to cut back on sugar the past year, so things that we used to eat seem overly sweet to us. This recipe called for a LOT of sugar and we both agreed that next time we will scale back on the sugar a bit.
