Beef tenderloin is our new Christmas tradition




Growing up, ham was our usual celebratory Christmas meat. As I got older and celebrated with my husband's family or my sister took over hosting Christmas, turkey sometimes was added. Then as the family grew, we'd visit with family and I'd also make a meal at home. Sometimes ham or ham and lasagna or ham and turkey. In recent years, the entree has fallen to my husband while I take care of sides and dessert. He's mastered the art of making steak, prime rib and beef tenderloin - and I'm always happy to let him take the reins.

The last few Christmases, we've gone toward beef tenderloin, which is fine with me. I love that hubby has taken that off my plate - and he's much better at it than I am. He applies a delicious rub and sears the outside. Then he cooks it with a digital thermometer inside that provides temperate updates on an app on his iPad or phone so that he can monitor it. It was really perfect. I fill in with sides. Often my middle son will make mashed potatoes - it's kind of his thing. I usually do at least one vegetable (broccoli or green beans are favorites with it), a corn soufflé, macaroni and cheese, a green salad and dinner rolls. Sorry, ham. Maybe we'll see you for new year's or Easter.
