Tacos at Thornton Distilling

There's a new chef in town at Thornton Distilling and he is doing amazing things. While it's long been a great place to sit and sip a cocktail made with their premium spirits, this is just the kind of makeover the kitchen needed. They've served good food in the past - from sandwiches and entrees delivered from a nearby restaurant to flatbreads to brunch - but the new menu is just totally next level. It is now as much a foodie destination as it is a distillery.


The new menu is more casual fare and sharables, but elevated versions of each - and the plan is to further expand the offerings with entrees and more. There are burgers, wings and  chili on the menu, but founder Andy Howell said he thinks the tacos are the star of the show and I couldn't agree more. There are three to choose from and we tried them all: 

Fish Tacos 

Crispy Thornton Lager Beer Battered Black Cod Filet, Lime Zest Mayo Cabbage Crunch Salsa Verde
Pico de Gallo and Lime Wedge


Street beef Tacos 

Seasoned Ground Beef, Shredded Lettuce, Sour Crema, Salsa Roja, Fresh Avocado


Barbacoa Tacos 

Slow Braised Pulled Beef Mild Chile Arbol Salsa, Melted Queso Blanco, Chopped Onions & Cilantro


It's extremely hard to pick a favorite and I'm not sure I can. Each was phenomenal in its own way. These are some of the best tacos I have ever had. Can't wait to get back and have them again and try more of the menu.
