Spinach, Bacon, Egg Breakfast Yummies
A couple of weeks ago I was rushing over to my in-laws house and had a grumbly tummy. It was after breakfast time at the standard fast food places. I pulled into Subway thinking I'd get a sandwich and then remembered that they do breakfast there. I'd never had anything on their breakfast menu. I wanted something small just to tide me over for a while until lunch.
I ordered an English muffin that came with eggs and cheese and then just like if I was ordering a foot long, she asked what I wanted on top. Hmmm....I wasn't used to veggies on a breakfast sandwich, but I LOVE spinach and asked her to throw some on top.
It was a tasty little bite, but I knew I could make it better at home. So, I toasted an English muffin and put some spinach on top. Then added a slice of bacon to each half (everything is better with bacon, you know!) and rather than scrambled eggs, I boiled one and put a couple slices on each half. Then added a little bit of thinly sliced Havarti on top of that and popped it in the microwave for 15 seconds so that it melted nicely. I topped it off with a little freshly ground black pepper. It was a nice light, little breakfast meal.
Ingredients:
1 toasted English muffin
8 - 10 spinach leaves
2 slices precooked bacon (heat in microwave for 30 seconds)
1 boiled egg
6 thin one inch slices of Havarti (Dofino is my go-to Havarti)
Freshly ground pepper
Pop in microwave just long enough to melt cheese after ingredients are layers. Serve open-faced.

I thought you got that from a restaurant because I was about to tell the hubby, "lets go here tomorrow". It really looks good.
