Lemonade pie with blueberries

Our most popular recipe that has been posted on our blog to date is one for Three Stooges Lemonade Pie, an easy sweet treat that requires no baking. When I recently went to make a batch, I realized I was short on Cool Whip (I needed three containers, but only had two.) So, I adjusted the recipe just a little.

It made for a flatter pie, which made a good surface for some fruit to go on top. My husband pulled out a ziplock bag of blueberries that had been taken out of the freezer the day before and thawed. Every year we pick several pounds of blueberries and we end up freezer quite a bit for future use. He poured them on top, juice and all and it was FABULOUS!

2 8 oz. containers Cool Whip
1 14 oz. can sweetened condensed milk
8 ounces lemonade concentrate, thawed
2 graham cracker crusts
1 cup blueberries

Empty Cool Whip into large bowl. Fold in can of milk. Add lemonade. Mix well with spatula and pour into pie crusts. Let chill for at least two hours. Makes two pies.

  1. Looks great, and soooo ez. I'm diabetic so I'm gonna try it with Crystal light but using much less water than for lemonade, of course. Thanks for a great idea.
