Darryl's Lasagna Soup


I'm a huge fan of Cooking the Darryl, the TikTok channel of Darryl Postelnick. I first got hooked on his cooking channel in 2020 when he started making videos with his daughter (many of them on his Blackstone) during the pandemic. 

One video I watched and then made at home is his lasagna soup, which is also included in his new cookbook, R. U. Kidding Me?

I've made it a few times and each time I modify it a little based on what I have in the fridge and pantry. Here's the latest batch I made. I didn't have Italian sausage, but did have some ground wagyu, which made for a tasty substitute. So here's how I made mine since I didn't have everything on hand from his recipe.

1 lb. ground wagyu
1 medium white onion, diced
2 teaspoons minced garlic
2 teaspoons Italian seasoning
1/2 tsp garlic salt
1/2 tsp freshly ground pepper
1/2 tsp sea salt
3 tablespoons tomato paste (from a refrigerated tube)
1 14 oz. can chicken broth (and 3 cans full of water)
1 tsp chicken boullion
2 14 oz cans petite Italian-seasoned diced tomatoes
5 or 6 lasagna noodles
5 oz. fresh spinach

Brown beef and drain. Return to low heat. Add onion, garlic, seasonings and tomato paste and stir. Once onions start to soften, add broth, water, bouillon and canned tomatoes. Bring to a boil. Break up lasagna noodles and add in. Reduce heat and simmer for about 15 minutes or until noodles are tender. Add spinach and stir. Simmer for about 3 additional minutes until combined.

Darryl recommends combining ricotta, parmesan and mozzarella and adding a dollop on top. I was out of ricotta this time, but it's a yummy addition.
