Sausage Breakfast Casserole
Years ago my co-worker Jeanine would bring in homemade goodies often and one of my favorites that she would make was her breakfast casserole. It was a simple recipe that you put together the night before and pop in the oven the next day. You can customize it with the vegetables you like or switch up the meat if you prefer ham or bacon. I made this batch without the veggies for the kids.
4 large eggs, beaten1 1/2 lbs ground sausage, browned and drained1 1/2 cup shredded sharp cheddar cheese jack cheese3 cups milk8 slices bread, white or wheat or mixed1 can mushrooms- drained (optional)sauteed green pepper (optional)
salt and pepper to taste
Cut crust off of bread and cube. Arrange in bottom of ungreased 9 X 13 pan. Mix eggs together, with milk, half the cheese, salt and pepper and vegetables. Pour over bread. Top with sausage and the rest of the cheese. Cover and refrigerate overnight.
The next morning, put in a 350 degree oven covered for one hour, then uncovered for another 15 - 20 minutes. Let sit for a few minutes before cutting.
