Cheesy cornbread
When our family gets together for Thanksgiving, there are some things that have to be included. Everyone has their own special request. Sweet potatoes. Noodles with gravy. Stuffing. Macaroni and cheese.Another favorite is the Cheesy Cornbread made by our sister-in-law, Maureen. It's just not Thanksgiving if this cornbread isn't on the table! Maureen passed on her recipe to me, so here you go! If it ends up on your table sometime, be prepared to make it over and over and over! :)
3 boxes of Jiffy Cornbread following the recipe according to directions: add 1 egg and 1/3 cup of milk for each box of mix. Add 2 large cans of creamed corn, liquid only, drain the corn throuh a mesh sieve. Let mix rest and get bubbly. Grease large cake pan and line with parchment paper. Fold in 2 cups fine shredded mild cheddar cheese to batter. Don't over stir. Pour into pan and bake at 400 degree oven for 35 - 45 min until done in the middle.
