Super Veggie Scramble
Eggs are a great source of protein and you can do so much with them. They're especially yummy when you load them up with veggies, meat and cheese. It's also a fabulous way to use up leftover veggies or meats.
Here's one of those recent scrambles that was loads with veggie - spinach, mushroom, green onion, red, yellow and green bell peppers. I simply put a tsp. or so of Extra Virgin Olive Oil in a skillet and add all the veggies until tender. Then I scramble the eggs with a little water or milk and add them to the pan. I opted for a tad of mozzarella on this one, added just at the end of cooking. It's a great way to get some veggies in your diet and it can also be whipped up for a light lunch or dinner.
