Cheesey bacon potatoes

I have to admit it ~ I rely quite a bit on my microwave for making side dishes. Especially in the busy spring months when things are uber crazy...you know soccer practice, baseball practice, end of year school activities likes plays and field trips and picnics and all of the clubs and organizations I'm involved with wrapping up their end of the year stuff...not to mention 3 of my 5 boys having April and May birthdays. And as much as I'd love to spend all day in the kitchen whipping up something yummy, sometimes there just isn't time.

One thing I've learned about the microwave and about shaving time off of meal prep is that is is awesome for potatoes. Baking potatoes can take an hour in the oven (or more if you're baking really large ones.) But, they can be done in the microwave in just a few short minutes. And if you cut them up, they cook even faster.

Pictured is a side dish of potatoes I made recently.

6 - 8 Yukon Gold potatoes, diced
2 tablespoons water

Place in a microwavable dish and cook on high for 3 - 4 minutes (depending on your microwave you may need to adjust time.)

Check to make sure they have softened. If not return for another minute or until fork goes in easily.

Add 3/4 cup of shredded cheddar or cheese blend and return to microwave for 30 seconds. Top with bacon bits, Italian seasoning and chives.

And there you go...a satisfying side dish that didn't come from a box in less than 5 minutes!
