Bacon topped stuffed meatloaf
Is there a thing in the world that wouldn't be better with bacon? I think not. So, when I got a hankering for meatloaf recently, I thought it couldn't hurt to throw a little bacon on top. And hey, cheese makes everything a little yummier, too, so I figured I'd throw in some of that as well.
I started with a pound of 93% lean ground beef.
Add added a lot of goodies to it.
Ingredients:
1 pound ground beef
1 egg
1/2 cup Italian bread crumbs
1/2 cup Panko bread crumbs
2 tbsp Sun Dried Tomato pesto
1 1/2 tsp minced dried onions
1 tsp smoked paprika
1/4 cup water
1 tsp Italian seasoning
3/4 cup Shredded swiss gruyere blend
1/3 cup ketchup
4 - 6 pre-cooked bacon slices
Mix together first 8 ingredients in bowl. Transfer half of the meat mixture to a loaf pan. Make an indentation in middle of loaf. Fill with cheese and Italian seasoning. Add remaining mixture on top and try to form together completely on sides. Top with ketchup and then bacon slices. Put in a 375 degree preheated oven. Cook for about 50 minutes.
