Planet Hollywood Nachos
Several years ago when there was a Planet Hollywood in Chicago, I went there for dinner and we ordered some nachos for an appetizer. You know how once in a while you taste something that never escapes you? Years down the line you can still taste it when you think about it. Well, those nachos fit into that category. They had sauteed peppers and grilled chicken on them with a little lime flavor.
Once in a while I get a taste for them and make up a plate of copy cat Planet Hollywood nachos. Yesterday, my hubby grilled some chicken for lunch and first thing that came to mind was chicken nachos.
Ingredients:
Hint of lime flavored chips
1/2 cup diced grilled chicken
3/4 cup Trader Joe's red, yellow, green bell peppers and onions
1/4 cup shredded cheddar or co-jack cheese
Put a layer of "Hint of lime" flavored chips on a platter. Top with chicken. Warm peppers and onions in the microwave and add layer. Cover with cheese. Return to microwave for a few seconds to melt cheese.
This version has shortcuts, but the end result is still tasty and reminds me of that meal long ago at Planet Hollywood.
