Chicken Penne Florentine at Popolano's, Lansing, IL

Recently I was asked to be a guest speaker for our local Rotary Club to talk about the history books I've written for Arcadia Publishing. Lucky for me it was also a lunch meeting and the club treated me to a meal. We had four or five dishes to choose from, but when I heard this one...well, they had me at "florentine..."

Whenever I hear the word "florentine" I know it will involve spinach and spinach is one of my very favorite foods. And I love spinach with penne. The dish was wonderful...with a hearty serving of chicken breast, the flavor and aroma of olive oil and some grated Parmesan. Perfect!
