When we picked strawberries in late-June, I was making all kinds of things with them in a rush to use them up while they were fresh. They are only at their peak for a couple days and after that start to get mushy, so the faster you can consume them, the better. I did put a bunch in the freezer for smoothies, but there was still a good amount.
We were using them in a lot of milkshakes and smoothies and for desserts, but when I was making lunch for my husband, I figured I'd incorporate some into his salad. Strawberries and spinach are a great combination, so that's what I started with. Than I added some mini cucumber and diced chicken breast and drizzled on some poppy seed dressing. Pretty. Healthy. Yummy.
