Cinnamon Crisps


Last summer, one of my boys took a summer enrichment class with this super awesome teacher that he also had for first grade, Miss Anderson, that focused on Spanish language and culture. At the end of the class was a celebration where parents were invited to come and see what they'd learned. They recited some Spanish, showed us pinatas that they had made, performed a Zumba dance routine and served refreshments, which included Jaritos soda, chips and salsa and this little dessert that they had made. It was very easy, with just four ingredients and my son has made it at home several times since then.

4 flour tortillas
butter
sugar
cinnamon

Cut the tortillas with kitchen scissors or a pizza cutter into sixths. Spread on cookie sheet. Spread butter on each piece and sprinkle with sugar and then cinnamon. Pop into and oven preheated to 350 degrees for about five minute or until tortillas are crisp. It's always a great confidence booster for a kid to make something completely on his or her own, especially when it's something this tasty - and that disappears so quickly that you have to make a second batch.
