Soup time: Vegetable Noodle Soup

While I adore the warm outdoor days of cooking on the grill, it's nice to think that the soup and comfort food days are ahead. The other day I wanted to use up some of the garden veggies, so I made a pot of vegetable soup.

8 chicken bouillon cubes
8 cups water
1 zucchini, quartered and sliced
1 summer squash, quartered and sliced with seeds removed
1 can diced tomatoes
3 plum tomatoes, diced
10 baby carrots, diced
2 celery ribs, sliced
1 tsp. Italian seasoning
1 tsp. garlic salt
Fresh oregano and rosemary to taste
1 1/2 cups noodles

Place bouillon cubes in water until boiling. Add vegetables and seasoning. Simmer for about 20 minutes. Add noodles, continue to simmer about 15 minutes.
