Ham, mushroom and spinach scramble
My favorite egg dish is scrambled eggs, but they are so much better when you add in other ingredients - meat, cheeses and vegetables. This is something you can so easily customize to include ingredients you like or eliminate what you don't like. And if there's something you really like, like spinach, add as much as you want. :)
Here's a batch I made up with ham, mushroom and spinach.
6 eggs
3 ham deli slices, cut into small cubes
1/4 cup of shredded cheddar
handful of mushrooms (about 1/2 cup)
About a cup of baby spinach
olive oil
Scramble eggs well in a medium bowl. In a large skillet, turn on medium heat and add about a tsp. of olive oil to pan (I use Extra Virgin Olive Oil.) After the pan has warmed, add your spinach and stir with spatula to help it wilt. As it's cooking, add your ham, cheese and mushrooms to the eggs and add to the pan. Watch carefully and flip with a spatula as it cooks. Serve with some toast, sausage and juice.
This isn't just for breakfast. I make it often for lunch and sometimes even dinner!
